Excellent taste and smell, quality of this shoulder is very high. Not too much fat comes in the pack. Probably one of the best iberico shoulders I ever had.
A bit too awkward for slicing, since the meat is very soft and fatty (in a good way), maybe next time I would go for bone-in option.
