E' una spalla, e di questo occorre tenerne conto. Ma è la miglior spalla che io abbia mai mangiato.
La carne è completamente infiltrata di grasso, quindi alla vista potrebbe lasciar "perplessi" (soprattutto se poco si sa del "prosciutto" iberico), ma è sufficiente tagliarne qualche fetta per entrare in un mondo diverso.
La fetta praticamente si scioglie in bocca, liberando sapori "decisi", che appagano il palato. Per me, una delizia.
Ormai da circa un anno mangio solo prosciutti e spalle iberiche, e per quanto mi riguarda devo dire che una volta provati è "impossibile" tornare indietro.

E' un prodotto di basso prezzo, acquistato più che altro per curiosità (mi ha attirato il fatto che non ci fossero conservanti).
E' un prosciutto un po' fuori dallo schema del "solito" prosciutto spagnolo (non è e non può essere un 5J!), ma il rapporto qualità prezzo è a mio parere eccellente.
Sapore buono, senza "sviluppi" particolari nel palato, ma piacevole.
Secondo me, come prosciutto "facile", è perfetto: poca spesa, tanta resa.
It is a low-priced product, bought more than anything else out of curiosity (I was attracted by the fact that there were no preservatives). It's a ham a little out of the scheme of the "usual" Spanish ham (it's not and can not be a 5J!), But the value for money is in my opinion excellent. Taste good, without "developments" particular in the palate, but pleasant. In my opinion, as "easy" ham, it is perfect: little expense, so much yield.
Ho acquistato questo prosciutto dopo aver mangiato per un paio di mesi delle spalle 5J Cinco Jotas, arrivavo quindi dal "quasi top" (almeno dal mio punto di vista).
All'inizio ho fatto fatica, la carne è meno "morbida", più asciutta, il sapore diverso.
Poi, procedendo (sarà stato il palato che si è abituato, sarà che all'interno il prosciutto era più morbido), giunto a circa 2/3/4 centimetri dall'osso, questo prosciutto mi è "entrato dentro" e mi è piaciuto molto.
Quindi il sentimento è misto: inizio da "no!", poi un "sì!" convinto.
Aggiungo, per esperienza con le spalle (ne ho prese 3, una da 7, una da 9 e una da 10), che forse si è trattato del mio esemplare, intendo dire la secchezza della carne per i primi 4/5 centimetri di taglio.
Lo riproverò, giusto per capire (e comunque nella parte morbida era molto buono, per cui il rapporto qualità/prezzo comunque si salva).

At the beginning I struggled, the meat is less "soft", more dry, the taste different. Then, proceeding (it will be the palate that has become accustomed, it will be that inside the ham was softer), arrived about 2/3/4 centimeters from the bone, this ham has "entered me" and I liked it very. So the feeling is mixed: beginning with "no!", Then a "yes!" convinced. I add, from experience with the shoulders (I took 3, one from 7, one from 9 and one from 10), which maybe it was my sample, I mean the dryness of the meat for the first 4/5 cm of cutting . I will try again, just to understand (and in any case the soft part was very good, so the quality / price ratio is saved).
Sulla spalla, servizio di consegna, eccetera nulla da dire: perfetto, cinque stelle.
Il punto (il mio punto, da consumatore alle prime armi) è solo uno ed è generale: acquistato prima un prosciutto e ora una spalla, secondo me vale sempre la pena di prendere un Jamon. La spalla è buona ma non come il prosciutto, ha un prezzo apparentemente più contenuto ma ha tantissimo scarto, è molto più complicata da affettare per un consumatore occasionale quale io sono (non sono un cortador di professione).

The shoulder is good but not like the ham, has a price seemingly more contained but has a lot of waste, it is much more complicated to slice for an occasional consumer which I am (I am not a cortador by profession).
